Paleo Chocolate Chip Cookies

The house cookie took some experimentation. It was really rough on Spy and Q, trying all those chocolate chip cookies. So rough that their father even ate a few for the good of the family. So rough that the boys really think we ought to have another round of experimentation.
I tried almond flour. Good, but my goal was to send these to school where almonds are a common allergen.
Coconut flour makes a cookie that is more cake-like than the harder cookie almond flour produced. But since all three boys preferred cake-like to the harder feel, I continued on. Then came varying levels of coconut flour. Too little and the cookies sagged and were mushy. Too much and they were dry. Like Goldilocks, they said this one was, “Just right.”
Paleo Chocolate Chip Cookies
Dry
3/4 cup coconut flour
1 tsp baking soda
1 tsp salt
Wet
5 eggs
2/3 cup coconut oil, melted (you could substitute melted butter)
2/3 cup maple syrup
1 tsp vanilla extract
Add in at the end
1 cup mini chocolate chips (I used Enjoy Life)
Preheat oven to 375F. Mix dry in one bowl, wet in another. Combine. Let the coconut flour have 2 or 3 minutes to do its sucking-up-the-moisture thing. Fold in chocolate chips. Spoon cookie dough onto your baking sheet. Bake for 15 minutes.
These cookies are a bit softer than those made with almond flour. I’d suggest keeping them small-ish. I managed to get 36 cookies of 2-inch size.
