One-Eyed Banana Bread Muffins

Halloween is just around the bend. And here at Spy and Q’s house, the holiday is celebrated with much enthusiasm as we hold an adult pot-luck costume party, children welcome. Costumed children tear through the house in packs as we adults admire each other’s creative costumes while we eat, drink and make merry. Even our dog will be sporting a costume this year.

But this year is different. We have gluten-free Spy and a paleo bent. I’ve decided to set up a corner of the kitchen as gluten-free, paleo friendly. A corner that I can point to and tell Spy, “anything there you can eat, no worries, no need to consult me.”

And since the Paleo Parents have issued a Halloween Recipe Round-Up challenge, I have decided to contribute this recipe:

One-Eyed Banana Bread Muffins

Ingredients:

2 green plantains, peeled and sliced into quarters

2 ripe bananas, peeled

3 eggs

1/4 cup coconut oil, melted

1/4 cup maple syrup

1 tsp baking soda

1/4 tsp salt

Eyes:

1 additional ripe banana

12 raisins

Directions:

Step 1: Preheat the oven to 350F.

Step 2: Put everything from plantains through the salt into a food processor.

Step 3: Run the food processor 2-3 minutes until you have a smooth batter.

Step 4: Line a muffin tin with muffin papers. Scoop about 1/4 cup of batter into each muffin cup.

Step 5: Slice the additional banana into quarter inch thick slices. Gently press a raisin into the center of each. Place one raisin/banana slice into the center of each muffin. (The banana ‘eye’ will start to fade after a day. Serve them fresh if you really want to capitalize on the ‘stare’.)

Step 6: Bake for 30 minutes. Cool and serve.

    Put these in the oven 10 minutes ago, and I just realized that I forgot to add the baking soda!! Hopefully they still turn out…..
